These muffins are so good! Very easy and quick, I made it for lunch for my 1 1/2 year old with a side of pears and she loved it. I used sliced provolone cheese, any cheese you have on hand will do.

I made these awesome muffins for lunch today along with salad and homemade chicken noodle soup. I didn't have swiss cheese so I added a cheddar/monterey jack combination which I had on hand. They were very moist. I will definitely make these again. Next time I will try them with the swiss cheese.
