Ingredients

cup uncooked bulgur
1
medium tomato, chopped (3/4 cup)
1/2
cup chopped seeded cucumber
1/2
cup cubed Swiss cheese (2 ounces)
1/4
cup diced fully cooked smoked ham
1/4
cup chopped fresh parsley
2
tablespoons thinly sliced green onions
1
tablespoon chopped fresh or 1 teaspoon crushed dried mint leaves
3
tablespoons olive or vegetable oil
3
tablespoons lemon juice
1/8
teaspoon salt
1/8
teaspoon pepper
Lettuce leaves, if desired

  • 1 Cover bulgur with cold water in bowl. Let stand 30 minutes; drain. Press out as much water as possible.
  • 2 Place bulgur, tomato, cucumber, cheese, ham, parsley and onions in glass or plastic bowl. Mix remaining ingredients except lettuce leaves; pour over bulgur mixture and toss.
  • 3 Cover and refrigerate at least 4 hours or overnight. Serve bulgur mixture on lettuce leaves.

people please stop insulting tabbouleh. Ham and cheese?! please! Tabbouleh contains lots (LOTS) of parsley. Its the main ingredients. some tomatoes ,green onions not onions and a little burgul. The ingredients should be cut so fine then add olive oil, lemon and salt. That is it. do it like this and see the result. I am Lebanese and I grow out eating tabbouleh so i should know.

I used quinoa as I did not have any bulger on hand. This was simply delicious! It will become a staple recipe in my home and for all take-along meals. You have to try and healthy too.
