Overall a pretty good recipe to change up the ordinary baked chicken. I can see adding different types of cheese for a different flavor and switching it up. You do have to seal up the chicken pretty well tho because my cheese oozed out a lot. Still a good one Betty!

I had no problems flattening the chicken. I used saran wrap to cover it and a meat mallet and pounded my frustrations of work onto the chicken! I seasoned with a sweet and spicy bbq chicken rub and used shredded cheddar cheese instead of sliced, but I'm sure it all melts the same way. My cheese stayed inside the chicken for the most part, next time I might try to add a little more and use toothpicks or twine as someone else suggested to hold it together. I highly suggest you use more seasoning or even bbq sauce than just salt and pepper if you prefer more than a bland taste. My husband and I loved it and will be making this again!

I have made this chicken with mild long peppers and mozzarella or montery jack cheese for years and I use toothpicks to hold it together. I do not pound the chicken. My husband who is very picky loves it and so do my friends

I made this for my family and everyone loved it! I took the advice to flatten the chicken in a ziplock bag and it worked great. i also sprinkled pepper, garlic powder on the chicken before putting the cheese on. Once i folded the sides up i held it together with toothpicks and just left the folded side up. Once you cook it and take the toothpicks out it doesnt look bad. I wish i could have fit alittle more cheese inside, but it was definately worth the trouble of flattening out the chicken.

I had a difficult time flattening and folding the chicken over the fillings, and some of the fillings popped out during baking, but when all was said and done, it still tasted good. More importantly, my picky husband liked it! I also tried grilling this recipe during the summer, but the chicken turned out very dry, so I wouldn't recommend that particular cooking method unless you plan to watch and tend it the whole time.

This dish was very easy and yummy! I had guests over who all loved it. I did season the chicken before cooking, just by sprinkling salt, pepper, and Tony Chachere's. I will defintely make this dish again.

This is good. Try putting chicken breast (one at a time) in a gallon size zip loc bag to flatten. The mess stays inside the bag while you wack away at it. Also, sprinkle the chicken with crushed Dorito chips the last few minutes of baking. It adds nice flavor and a tastey crunch!
