Cheddar Potato Soup

Baking potatoes
10 ounce cans of cheddar soup
Chicken stock
bacon, cooked and chopped
shredded cheddar cheese
salt and pepper to taste
sour cream for garnish
OPTIONAL: if soup is not thick enough, add dry potato flakes to thicken
  1. Mix cheddar soup and chicken stock in a large pan on medium heat until simmering. stir occasionally.
  2. Heat baking potatoes in the microwave on high for about 2-1/2 minutes, or until done. Let cool and dice into 1/2 inch cubes.
  3. Add potatoes, bacon, cheddar cheese, salt and pepper to the cheddar soup and chicken stock, stir. Add potato flakes to desired thickness.
  4. Ladle soup into bowl with a dollop of cour cream and cheddar chesse sprinkled on top.
