Ingredients

Baking potatoes
2
10 ounce cans of cheddar soup
Chicken stock
bacon, cooked and chopped
shredded cheddar cheese
salt and pepper to taste
sour cream for garnish
OPTIONAL: if soup is not thick enough, add dry potato flakes to thicken

  • 1 Mix cheddar soup and chicken stock in a large pan on medium heat until simmering. stir occasionally.
  • 2 Heat baking potatoes in the microwave on high for about 2-1/2 minutes, or until done. Let cool and dice into 1/2 inch cubes.
  • 3 Add potatoes, bacon, cheddar cheese, salt and pepper to the cheddar soup and chicken stock, stir. Add potato flakes to desired thickness.
  • 4 Ladle soup into bowl with a dollop of cour cream and cheddar chesse sprinkled on top.
