1
cup Original Bisquick® mix
1
teaspoon onion powder
1/4
cup butter or margarine, softened
2
tablespoons boiling water
1
tablespoon water
1
teaspoon unflavored gelatin
2
packages (8 oz each) cream cheese, softened
1/4
cup whipping cream
1
tablespoon Worcestershire sauce
1/2
teaspoon ground mustard
2
cups shredded sharp Cheddar cheese (8 oz)
2
tablespoons chopped fresh chives
1
box (13 oz) assorted crackers (about 96 crackers)
  1. Heat oven to 400°F. Spray 9-inch springform pan with cooking spray. In medium bowl, stir Bisquick mix, onion powder and butter until crumbly. Add boiling water; stir vigorously until very soft dough forms. Press dough firmly in bottom and 1 inch up side of pan, using fingers coated with Bisquick mix.
  2. Bake crust 8 to 10 minutes or until light golden brown. Cool on cooling rack, about 15 minutes.
  3. Meanwhile, in medium microwavable bowl, place 1 tablespoon water. Sprinkle with gelatin; let stand 5 minutes. Microwave uncovered on High 30 seconds; stir until gelatin is dissolved.
  4. Add cream cheese, whipping cream, Worcestershire sauce and mustard to gelatin. Beat with electric mixer on medium speed until smooth. Add Cheddar cheese; beat until well combined. Spoon into cooled crust; spread evenly. Refrigerate 1 hour.
  5. To serve, carefully remove side of pan. Place cheesecake on serving platter. Garnish top with chives. Serve with crackers.
