I made a double batch of these muffins. Gave them to friends and coworkers. Huge hit with them. I made a few minor changes: used Smart Start cereal, unsweetened applesauce, (then added 2 extra teaspoons of brown sugar), dark brown sugar, and I used red sugar on top, (the kind you decorate with). I'd definately make them again.:)

I used cinnamon apple sauce, omitted the sugar on top...but pretty much followed the recipe as is...and these are perfect to add to your morning commute with coffee! I might even crush up a banana in my next batch to use it up and add a little more flavor and fiber!

I love this recipe. I use a different higher fiber cereal that as you get toward the end of the box, it gets too finely ground up to eat in a cereal bowl...so we just hold onto it and I make these muffins. I used cinnamon apple sauce, omitted the sugar on top...but pretty much followed the recipe as is...and these are perfect to add to your morning commute with coffee! I might even crush up a banana in my next batch to use it up and add a little more flavor and fiber!
