Celery and Apple Salad with Cider Vinaigrette

Dressing

tablespoons apple cider or apple juice

tablespoon cider vinegar

teaspoons canola oil

teaspoons finely chopped shallots

Salad

cups chopped romaine lettuce

cups diagonally sliced celery

medium apple, unpeeled, sliced very thin (about 1 cup)

cup sweetened dried cranberries

tablespoons chopped walnuts

tablespoons crumbled blue cheese

  • 1 In small bowl, beat all dressing ingredients with whisk until blended; set aside.
  • 2 In medium bowl, place lettuce, celery, apple and cranberries; toss with dressing. To serve, arrange salad on 4 plates. Sprinkle with walnuts and blue cheese. Serve immediately.

Expert Tips

Blue cheese can be purchased already crumbled in the refrigerator section at the grocery store. Crumbled feta cheese would also be a great alternative.
