Cauliflower and Bacon Egg Bake

Ingredients

tablespoon olive oil
1
large onion, chopped (1 cup)
1
head cauliflower, separated into florets
1
teaspoon salt
1
cup Original Bisquick® mix
2
cups milk
4
eggs
5
slices bacon, chopped, crisply cooked
2
tablespoons chopped fresh chives
3/4
cup shredded pizza cheese blend

  • 1 Heat oven to 350°F. Spray 3-quart casserole with cooking spray.
  • 2 In large skillet, heat butter and oil over medium heat. Add onion; cook 2 to 3 minutes, stirring occasionally, until soft. Add cauliflower and 1/2 teaspoon of the salt. Cook 2 to 3 minutes, stirring occasionally, until cauliflower begins to brown. Spoon mixture into casserole.
  • 3 In medium bowl, beat Bisquick mix, milk, eggs and remaining 1/2 teaspoon salt with whisk. Stir in bacon and chives. Reserve 2 tablespoons of the cheese; stir remaining cheese into egg mixture. Pour evenly over cauliflower mixture. Sprinkle with reserved 2 tablespoons cheese.
  • 4 Bake uncovered 35 to 45 minutes or until knife inserted in center comes out clean.

Substitute broccoli for the cauliflower, or use a combination.

Garnish the egg bake with extra chopped chives, if desired, and serve with a tossed salad.

Very easy to make. Cauliflower took a bit longer to brown. The taste is delicious! I received many compliments on this dish. Definitely will be making this again. Great the next day too, if any is left!

I highly reccommend this recipe! You will not be disappointed it is very tasty and looks just like the picture! The cauliflower took a little longer to brown than what the recipe said. I didn't have the pizza blend cheese so I just mixed mozzarella and cheddar together. It even tasted good cold the next day. I will definately be making this again and again!
