box Betty Crocker® SuperMoist® carrot cake mix
1/3
cup Gold Medal® all-purpose flour
2/3
cup butter or margarine, melted
2
eggs
1
cup sweetened dried cranberries

Glaze

1/2
cup Betty Crocker® Rich & Creamy cream cheese frosting

Directions

  • 1 Heat oven to 350°F (325°F for dark or nonstick pans). In large bowl, beat cake mix, flour, butter and eggs with electric mixer on low speed 1 minute. Stir in cranberries.
  • 2 On ungreased cookie sheets, drop dough by teaspoonfuls 2 inches apart.
  • 3 Bake 10 to 13 minutes or until edges are set. Immediately remove from cookie sheets to cooling racks. Cool completely, about 10 minutes.
  • 4 In small microwavable bowl, microwave frosting uncovered on Medium (50%) 15 seconds. Drizzle frosting over cookies. Store covered.

Played around a little with this recipe. I used apple sauce instead of butter and used oatmeal instead of flour. I actually used 1 1/2 cups of oatmeal. My husband really enjoyed them. It was bit hard to tell when they were done. But over all I really recommend the changes if you are looking for a healthier option.

So simple & so yummy! Tried these for the first time to take to a cookie exchange. They were a hit! Also, hubby took leftovers to work the next day and came home telling me what a big hit they were with co-workers. Going to make more for us this week and another batch to take to our families over New Years! Definitly one I will remake! I only got 3 dozen per batch for what I consider an average size cookie.
