Ingredients

  • 1 1/2 medium carrots, shredded (1 cup)
  • 1 medium potato, peeled and shredded (1 cup)
  • 2 tablespoons grated onion
  • 1/2 teaspoon salt
  • 1/4 cup fat-free cholesterol-free egg product or 1 egg
  • 1/4 cup unsweetened applesauce

Steps

    Mix all ingredients, except applesauce, in medium bowl.
  • 2
    Spray nonstick griddle or 10-inch skillet with cooking spray. Heat griddle over medium heat or to 375°.

    For each patty, spoon approximately 1/2 cup batter onto hot griddle. Cook 2 to 3 minutes on each side or until golden brown. Top warm patties with applesauce.
