This cake was amazing. I changed one thing and added another. To begin with, I am a vegan, so had to omit the egg from the recipe. Rather, I replaced it with apple sauce, which made the cake so moist and delicious, it's like a little bite of cloud in one's mouth. My friends and family loved it. The eggs were not missed. If you want to go that route, you will be adding 2 ounces (or 1/4 of a cup) of apple sauce per egg required. I used 6 ounces of apple sauce baby food. Also, I added 1/4 of a cup of brown sugar. This cake is absolutely divine. Never had one better, and I love cake to point of having it weekly!

Cake was very good. Although we like pineapple in our carrot cake, I used a small can of crushed pineapple and the juice and left out the water. I also mixed the walnuts and pecans. Use the frosting recipe from my regular recipe, 2 packs of cream cheese, 1 tsp of vanilla and 1 1/4 c powder sugar. Everyone thought it was yummy. I had a larger group and made two cakes for a layer cake.

Everyone loved this. We are not fond of the nuts so we left them out. It was nice and light and fluffy. Definitely will make again. I might try the applesauce and raisins next time. Thanks again for the recipe.

This cake was amazing! Non-GF family members didn't have a clue it was gluten free--none of that gritty texture. I added 1/4 cup sour cream as another reviewer suggested--made it moist and delicious. My family prefers this recipe to a local bakery's regular famous carrot cake.

I have not had carrot cake in 11 years due to the fact that I found out in 2000, I am gluten intolerant. This recipe is so scrumptious, it tastes just like I remembered. Thank you Betty Crocker for hopping on the Gluten Free train for those of us who must eat gluten-free for the rest of our lives....

LOVE this recipe! I tweeked it a little bit to make it my own. I added some golden raisins and added some coconut. Made this for a family get-together and everyone loved it. No one could believe it was gluten free! Excellent recipe! :)

This is my favorite GF dessert. I added 1/4 c sour cream to it and it tasted as good as regular carrot cake. I made a regular carrot cake substituting a regular cake mix and still added the sour cream. Someone said it was the best carrot cake they ever had, and this came from an experienced baker. I also added raisins.
