Delicious Southwestern Dinner
Tbsp Vegetable Oil
Lb Shredded Pork
Cup Chopped Onion
Medium Peeled & Chopped Potato
Medium Diced Tomato
Can(15oz) Drained & Rinsed Black Beans
Tsp Chili Powder
Tsp Garlic Powder
Tbsp Garlic Salt
Cans(10oz ea) Enchilada Sauce
` Corn Tortillas
Cups Shredded Cheese (Fiesta Blend)
~~PREHEAT OVEN TO 375degrees~~ ~~Coat 13x9-inch casserole dish with non-stick spray~~
Heat oil in a large skillet. Add pork & onion. Cook 5 minutes until lightly browned. Add potato & tomato. Cook, covered, 5-7 minutesor until potato is fork tender.
Add beans, chili powder, salt, & garlic powder/salt. Mix until well combined. Set aside.
Spread 1/4 cup of the enchilada sauce on bottom of casserole. Tear apart 8 tortillas, layer over sauce. Spoon on meat/bean mixture. Pour 1/2 cup enchilada sauce evenly over meat layer.
Tear up 8 remaining tortillas layer over sauce. Pour remaining sauce over top & sprinkle with cheese.
Bake 25-30 minutes or until cheese is melted & bubbly
