Lb Shredded Pork

Cup Chopped Onion

Medium Peeled & Chopped Potato

Medium Diced Tomato
1
Can(15oz) Drained & Rinsed Black Beans

Tsp Chili Powder
1
Tsp Salt
1/2
Tsp Garlic Powder
1
Tbsp Garlic Salt
2
Cans(10oz ea) Enchilada Sauce

` Corn Tortillas
1 1/2
Cups Shredded Cheese (Fiesta Blend)

  • 1 ~~PREHEAT OVEN TO 375degrees~~ ~~Coat 13x9-inch casserole dish with non-stick spray~~
  • 2 Heat oil in a large skillet. Add pork & onion. Cook 5 minutes until lightly browned. Add potato & tomato. Cook, covered, 5-7 minutesor until potato is fork tender.
  • 3 Add beans, chili powder, salt, & garlic powder/salt. Mix until well combined. Set aside.
  • 4 Spread 1/4 cup of the enchilada sauce on bottom of casserole. Tear apart 8 tortillas, layer over sauce. Spoon on meat/bean mixture. Pour 1/2 cup enchilada sauce evenly over meat layer.
  • 5 Tear up 8 remaining tortillas layer over sauce. Pour remaining sauce over top & sprinkle with cheese.
  • 6 Bake 25-30 minutes or until cheese is melted & bubbly
