Ingredients

1: pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix

1/2: cup coconut

1: tablespoon grated lime peel (about 1 lime)

3: tablespoons lime juice

6: tablespoons butter or margarine, melted

1: egg

1/4: cup powdered sugar

Directions

1 Heat oven to 350°F. In large bowl, stir cookie mix, coconut, lime peel, lime juice, butter and egg until soft dough forms.
2 Drop dough by level tablespoonfuls 2 inches apart onto ungreased cookie sheets.
3 Bake 9 to 13 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet. Cool completely, about 15 minutes.
4 With small strainer, sift powdered sugar over cooled cookies. Store covered at room temperature.

I loved these cookies!!! I am a big fan of anything "lime" and they didn't disappoint. I used fresh lime juice and the zest. I sprinkled with a bit of lime green sanding sugar for a festive touch. Brought them to a family picnic & got rave reviews!!

These are so good! I agree that the mix was a little runny but I put it in the fridge for a few minutes and it turned out great. Will definitely make again!
