pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix

cup coconut
1
tablespoon grated lime peel (about 1 lime)

tablespoons lime juice
6
tablespoons butter or margarine, melted

cup powdered sugar
  • 1 Heat oven to 350°F. In large bowl, stir cookie mix, coconut, lime peel, lime juice, butter and egg until soft dough forms.
  • 2 Drop dough by level tablespoonfuls 2 inches apart onto ungreased cookie sheets.
  • 3 Bake 9 to 13 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet. Cool completely, about 15 minutes.
  • 4 With small strainer, sift powdered sugar over cooled cookies. Store covered at room temperature.

Use a #70 or 1-tablespoon spring-loaded ice cream scoop to make quick work of dropping the cookie dough. Using a scoop also ensures cookies will be the same size and will bake the same length of time.

These are so good! I agree that the mix was a little runny but I put it in the fridge for a few minutes and it turned out great. Will definitely make again!

This is a great and easy recipe. I made it for our church cookie sale last summer and it was a spectacular hit. A nice change from the usual choc. chip and other "heavy" cookies. They have already requested more for this year.
