Caribbean Ham and Black Bean Soup

Ingredients

  • 1 medium onion, chopped (1/2 cup)
  • 2 cups water
  • 1 cup diced fully cooked ham
  • 1/2 cup frozen whole kernel corn
  • 1 can (15 ounces) Progresso™ black beans, rinsed and drained
  • 1 can (14 1/2 ounces) Mexican-style stewed tomatoes, undrained
  • 2 tablespoons hot-pepper (jalapeño) jelly
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon ground ginger

Steps

    Spray 3-quart saucepan with cooking spray; heat over medium heat. Cook onion in saucepan over medium heat 2 to 3 minutes or until crisp-tender.

    Stir in remaining ingredients. Heat to boiling; reduce heat. Simmer uncovered 15 minutes, stirring occasionally.

  • Hot-pepper jelly adds a little punch to this zesty soup, but if you don't have it, use apple jelly.
  • Garnish individual servings with chopped fresh cilantro.
