Caribbean Chicken

Ingredients

  • 4 chicken drumsticks (about 1 pound)
  • 4 chicken thighs (about 1 pound)
  • 1 medium mango, peeled, pitted and cubed (1 cup)
  • 1 tablespoon grated gingerroot
  • 1 teaspoon finely shredded lime peel
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 2 medium green onions, thinly sliced (2 tablespoons)
  • 1 clove garlic, finely chopped
  • 2 cans (15 ounces each) black beans, undrained

    Heat oven to 375°.
  • 2
    Place chicken pieces, skin sides up, in ungreased rectangular baking dish, 13x9x2 inches. Bake uncovered 40 minutes. Drain excess fat from baking dish.

    Mix remaining ingredients; spoon over and around chicken pieces. Cover and bake about 30 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.

  • You can substitute 1 can (8 ounces) sliced peaches, drained and cut up, for the cubed mango.
  • If you don't want to bother grating fresh gingerroot, use 1 teaspoon ground ginger in its place.
