Ingredients

cup plain yogurt
1/4
cup mayonnaise or salad dressing

tablespoon fresh lemon juice

tablespoon chopped fresh chives

cups 1 1/2-inch pieces cantaloupe
2 1/2
cups cut-up cooked chicken
1
cup red or green grapes, cut in half
1
medium cucumber, cut into strips

  • 1 Mix yogurt and mayonnaise in large bowl. Stir in lemon juice, chives and salt.
  • 2 Stir in remaining ingredients. Serve immediately, or refrigerate until chilled, at least 2 hours but no longer than 24 hours.

I used light mayo and left out the chives which made a very interesting mixture of flavors. It was pretty good, but better the second night. When the juices had a night to set and seep it tasted a bit like cucumber salad. Very fresh, and great for summer. Next time I''ll try it with a raspberry vinigarette.

Love it, love it, love it, love it, LOVE it! Every bite is a taste of summer. I make it all the time and sit out side with my family to enjoy it. My absolute favorite summer recipe!

We really liked it. We added pineapple. strawberries and some almonds. We also left out the mayo and added a poppyseed dressing. We also found that chicken strips with a smoked flavoring add an extra touch with this salad. It was great. We just like to take the basics of a recipe and add more to it. So if it wasn''t to your liking try again. this was really easy to make.
