California Chicken Sandwiches

medium green onion, finely chopped (1 tablespoon)

teaspoon grated lemon peel

thin slices sourdough bread, toasted

large slices tomato (1/4 inch thick)

cups shredded skinless smoked chicken

medium avocado, pitted, peeled and cut into 12 slices

  • 1 In small bowl, stir together mayonnaise, onion, paprika, lemon peel and garlic with wire whisk.
  • 2 On 1 side of 6 bread slices, evenly spread mayonnaise mixture; layer with tomato, chicken and avocado. Top with remaining 6 bread slices. Serve immediately.
