Everyone loved it, even my very picky 2 and 4 year olds! I added 2 veg boullion cubes at the start for a little extra flavor, left out the black eyed peas so as not to sabotage my chances of it getting eaten, and used fresh salsa from the store. Only wish it had made more!

made this for dinner tonight make a few changes 1st we used diced tomatoes with green chiles and onion then we add a extra can of green chiles,to give it some more flavor we use creole seasoning and garlic . we also sauteed the sausage with onion and a lil of green chiles. when it was done we add some louisiana hot sauce to give it some kick!!!!

Quick simple and good. My kids loved it and I got them to eat beans and veggies. I used canned corn and used the whole can turned out great.

I substitued andouille sausage instead of kielbasa and used canned diced tomatoes with jalapenos instead of salsa as recommended by another poster. It turned out really good and everyone seemed to like it.

Good, simple, tasty, quick evening meal. Changes, some based on reading reviews: 1)I sauteed the sausage with red onion and yellow bell pepper 2) I used short grain brown rice. Heartier, holds up well, adds good flavor and fiber 3) I used canned diced tomatoes with Jalapeno (vs. the salsa) to make the flavor more cajun 4) I added Emeril's Essence, garlic & cayenne (I like spicy foods ;-)) 5) I cooked the rice with 1 part chicken broth, 1 part water to add flavor That's about it.

Dish does not have a good presentation. Looks unappealing. My husband would not even try it. I ate mine but does not taste Cajun. Tastes like Mexican food with black eyed peas. Odd combo with the sausage. Not a keeper.

This was a horrible dish. Not only did it not imitate Cajun taste at all, it had a very weird flavor. The salsa just did not work. Too Mexican in flavor.

My family and I was tired of traditional Christmas food so we opted to have lighter foods for the day. One of my sons is a very picky eater, but thought that this dish was excellent. For me, it was very, very quick and tssty!
