Ingredients

  • 1/4 pound extra-lean ground beef
  • 1 small stalk celery, chopped (1/4 cup)
  • 1 small onion, chopped (1/4 cup)
  • 1 teaspoon Cajun seasonings blend
  • 1 cup uncooked instant rice
  • 1/4 cup chopped green bell pepper
  • 1/2 cup water
  • 4 medium fresh or 1/2 cup frozen (thawed) okra, sliced
  • 1 medium tomato, chopped (1/2 cup)
  • 1 can (11 1/2 ounces) lightly tangy eight-vegetable juice

Steps

    Heat 10-inch nonstick skillet over medium-high heat. Cook ground beef, celery, onion and Cajun seasoning blend, stirring frequently, 4 minutes or until beef is brown and vegetables are tender.

    Stir in remaining ingredients. Reduce heat to medium-low. Cover and cook 5 minutes or until rice is tender.
