Caesar Tuna Salad in Pasta Shells

Ingredients

  • 16 uncooked jumbo pasta shells
  • 2 cans (6 ounces each) albacore tuna in water, drained
  • 1 cup cherry tomatoes, cut into fourths
  • 1 package (10 ounces) frozen cut green beans, cooked and drained
  • 1/3 cup sliced ripe olives
  • 1/4 cup mayonnaise or salad dressing
  • 1/4 cup creamy Caesar dressing
  • Dash of pepper
  • Leaf lettuce leaves
  • 2 hard-cooked eggs, chopped

    Cook and drain pasta shells as directed on package. Rinse with cold water; drain.

    Mix tuna, tomatoes, green beans and olives in medium bowl. Mix mayonnaise, Caesar dressing and pepper; toss with tuna mixture.

    Spoon about 1/4 cup tuna mixture into each pasta shell. Arrange shells on lettuce leaves. Sprinkle with eggs.

  • Transform this salad into a low-fat favorite by using fat-free mayonnaise and reduced-fat Caesar dressing. You'll reduce the fat to 16 grams and the calories to 435 for each serving.
  • Complete the meal with soft breadsticks or crusty sourdough bread.
  • For a special presentation, serve the pasta shells on a platter lined with burgundy-colored radicchio and bright green leaf lettuce leaves.
