  1. Beat egg with electric mixer or spoon.Add remaining ingredients in order listed and beat until smooth.Pour batter from 1/4 measuring cup onto electric skillet sprayed with cooking spray.Flip pancakes as they are puffed and full of bubbles, but before bubbles break. Bake other side until golden brown. Serves 4.
