  • 1 Heat griddle or skillet over medium-high heat or electric griddle to 375ºF; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
  • 2 Stir all ingredients until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle.
  • 3 Cook until edges are dry. Turn; cook until golden.

Bisquick isn't available where we are living at the moment. What should I do instead of? I tried just plain flour and wasn't very impressed. Obviously missing some important ingredients! Can't wait to try them when made right.

The rising of the batter (as well as any baking that's done) requires a chemical reaction (a precise one). Since buttermilk is being used instead of milk it changes the chemistry needed to "get a rise" out of the pancakes. Buttermilk is more acidic than regular milk so an extra chemical base is needed to bring the proper chemistry back into balance. Since sodium hydroxide (lye) is rather caustic, poisonous, and would taste down right horrid, an extra bit of baking soda will do the trick. I hope this answers your question to your liking.

Please bear with me - I have not yet made these. Why does the recipe call for 1 teaspoon baking soda? I thought baking soda was already in the Bisquick mix. Thanks
