Buttermilk Crackling corn Bread
Corn bread from Becky's aunt.
cup sifted all purpose flour
tsp baking soda
tsp double acting baking powder
cup yellow stone ground corn meal
cup buttermilk or yogurt
tbsp melted butter or fresh bacon drippings
cup salt pork cracklings
Hall all ingredients at room temperature. Preheat oven to 425.
Sift together flour, baking soda, baking powder, sugar, salt.
Add corn meal.
Combine and beat buttermilk/yogurt, eggs, drippings.
Stir liquids into dry ingredients with a few swift strokes (leave lumps)
Add pork cracklings
Pour batter into greased 9 x 9 pan or muffin pan. Bake 25-30 min. in 9 x 9 pan; 15 min. in muffin pan If using for mexican cobbler, pour batter over cobbler. Do not bake ahead.
