Used a mini muffin tin and ended up with about 30 mini muffins. They were a great hit at a party I took them to! Next time I might try to add a little more sugar and make them sweeter.

Very easy to make - I used 1 cup of cornmeal and 3/4 cup of plain flour instead of 1 & 3/4 cup of cornmeal and then followed the recipe using the remaining ingredients. They were delicious and had just the right balance of crumbly cornmeal and softness. I would make these again and again!

This can also be put into a 9 x 9 non-stick pan and baked for about 20 minutes. Check it after the 17 min. given in the instructions. Use the toothpick test to test for doneness. My family loves it like this.

Tastes wonderful and are very easy and fast to prepare, but maybe I did something wrong - they are extremely crumbly. (Not a huge deal - put them in a dish with a little butter or syrup or something!)
