Ingredients

1 1/2
cups Gold Medal® all-purpose flour
3
tablespoons granulated sugar
3/4
cup butter or margarine, softened
3
eggs, separated
2 1/2
cups packed light brown sugar
1
teaspoon vanilla
1/2
teaspoon salt
1
cup chopped pecans
3/4
cup flaked coconut
2
tablespoons powdered sugar

Directions

  • 1 Heat oven to 375°F. Grease 13x9-inch pan with butter.
  • 2 In medium bowl, mix flour, granulated sugar and butter. Press mixture in bottom of pan. Bake 12 to 14 minutes or until light brown.
  • 3 Meanwhile, in large bowl, beat egg yolks, brown sugar, vanilla and salt with electric mixer. Stir in pecans and coconut. In small bowl, beat egg whites with electric mixer until foamy. Fold into egg yolk mixture.
  • 4 Remove partially baked crust from oven. Spread filling evenly over crust. Reduce oven temperature to 350°F.
  • 5 Bake 25 to 30 minutes or until deep golden brown and center is set. Sprinkle powdered sugar over bars. Cool on cooling rack. Cut into 6 rows by 6 rows.

Tastes great and were very easy to make. Don't use the foil in the bottom of the pan. Too hard to get seperated.

I first found this recipe a year ago at the time my son was six and loved these bars so much I think he ate half the pan so I took them to a family Christmas party and everyone loved them and wants them back every time we all get together.

After reading the reviews I altered the baking method to line the pan with foil and then butter it liberally. My edges were not overdone and the middle was set. The flavor is sooooo wonderful! The main reason to not make them is that it is so hard to stop eating them! My 4 year old grandson couldn't get enough of them either. This is a new favorite for sure! Thanks for posting!
