Butter Pecan Cake with Apricots

Doctor a cake mix with a can of fruit. A sweet layer of fruit preserves hides under the creamy frosting.

We L-O-V-E this cake! I suggest chilling the apricot preserves before spreading them on the cake. It keeps the frosting from getting "smeared" with the preserves...they remain in two layers better. Also, I prefer to store this cake in the refridgerator. To me, it tastes better chilled.

Well i made this cake but added chopped pecans an dates in between 2 layers wi pecan frosting always trying something different. Family dont like apricots so will see but looks so good!!!

This was very good! Made a few changes...drained the apricots and then used the juice in place of the water. Also mixed the preserves with about half a can of frosting and spread on top, then sprinkled with diced pecans. Everyone at worked loved it!!A keeper!!
