Ingredients

slices bacon, crisply cooked and crumbled

cups bite-size pieces lettuce
1 1/2
cups shredded Cheddar cheese (6 ounces)

large tomato, chopped (1 cup)
1/3
cup mayonnaise or salad dressing

Old El Paso® flour tortillas (8 inches in diameter)

  • 1 Toss all ingredients except tortillas.
  • 2 Spread one-sixth of bacon mixture on each tortilla. Fold up bottom third of each tortilla; roll up to form cone shape with folded end at bottom.

I've made these several times, each time experimenting with different things. Our favorite (and easiest) version uses shredded lettuce (bagged), chopped Deli-rotisserie chicken, Oscar Mayer "Real Bacon Bits", diced (de-seeded) tomato, shredded cheddar, and just enough mayo to incorporate. They're gone in a flash!

What a great weeknight dinner. So easy and quick and the flavor is fabo!! I mixed lite sour cream with salsa to sub for the mayo - WOW! what a hit. I used La Tortilla Factory small low carb tortillas - perfect.
