Blogger Christy Denney of The Girl Who Ate Everything shares a favorite recipe Bunny Surprise Cake. This bunny cake starts with a vanilla cake mix and is decorated to look like an Easter bunny with coconut and assorted candies. By adding some Easter colors to the batter a colorful surprise awaits when each slice of cake is served.

So happy to find the recipe/ idea. My Mother died in 2006 but she made these when I was a child and then for my 2 boys. I will put my own spin on it but I like the chocolate icing idea and also the cool whip icing. Happy to have the picture of it finished with the candy face. Thanks!

This cake is fantastic and gets changed up every year. I have a son who was born on Easter Monday and his birthday falls around easter every year. I have changed in many times, sometimes I use coloured coconut, other times coloured icing. I have thrown chocolate eggs into the mixture and coloured candies instead of the food colouring. I also wrap in waxpaper, coins for a birthday present (just remember to put toothpicks in so the birthday child gets the coins). We use licorice for the mouth and whiskers and oreos for the eyes. We have used a large assortment of candies for the bowtie. Love this cake and will make it again this year for Easter. Sons birthday is two weeks later, so he will get another kind of bunny cake that I also make, he will be 19 now and has asked for a bunny cake. look forward to another year of hoppyness.

I have been making this cake every Easter for 30 years first with my children and now with my grandchildren. This year the youngest of the 9 will do the frosting.! I am going to try the color layers. Seems like fun!!

I've make this bunny cake since my kids were small. I don't use coconut, but dye frosting with food dye. My oldest is now 49 years old. And what makes this so much fun is that most of my kids now have a picture contest every year to see who made the "best" bunny. Memories passed on. That is a treat in itself!

I haven't seen this recipe in years!! I used to make this cake for my son who was born on Easter. He is now 34 years old!! I now make it for my Granddaughter whose birthday usually falls near Easter! In fact she requested it for her birthday this year!! I usually dye coconut for the ears, but I like the pink sugar idea! This year Hannah wants chocolate cake with pink frosting! Should be interesting

I will be making this for Easter this year. I am omitting the coconut as I am allergic. I am happy to have found this recipe as my grandmother use to make it for my brother and me when we were young.

I started baking this rabbit cake for my daugther when she was 4 or 5...She turned 30 last year and I made it for her again,SHEs still thrilled to get one, And so were her Chidren...lol Its EASY to make and put together and brings alot of smiles..OH...Did I say her birthday is right @ Easter, so it works...

I made this last Easter for a friend's Easter dinner. She has two young boys and they loved it. They mostly ate the jelly beans, but we adults enjoyed the cake very much and I even had some to bring in to work to let my coworkers enjoy it.

I have been making this cake since my 41 year old daughter was just a small child, now i make it every year with my 2 grandchildren. They are 11 and 14 and still can't wait to make it each Easter.
