I've been making these for a few years now. And slosh29 is right, these aren't "Buffalo wings" they are hot wings. And they are similar to a popular restaurant chains wings. The real trick to these is to let them sit in the flower in the refrigerator for about an hour before you fry them and then coat them in flower again right before they go into the hot oil. I love crispy wings, so i LOVE these. My fave.

Originally I was impressed reading the recipe but changed a bit. I live near Buffalo and the joke around here is anything that is orange and spicy, or spicy chicken of any kind is labeled "Buffalo". Real Buffalo wings are fried but they are not coated with flour at all. They are just fried as is and covered in sauce. The sauce recipe looks close.Alway use Franks Hot Sauce and some like to put in a touch of vinegar. Overall this is close to authentic but skip the coating step and dont think of using anything but blue cheese. :-)
