Ingredients

cups cooked chicken strips
1/2
cup Buffalo wing sauce
1
cup shredded Cheddar cheese (4 oz)
1/2
cup crumbled blue cheese (2 oz)
1
cup chopped celery (about 2 1/2 stalks)
1
cup Original Bisquick® mix
1/2
cup cornmeal
1/2
cup milk
1
egg
2/3
cup blue cheese dressing

Directions

  • 1 Heat oven to 400°F. In large bowl, toss chicken and Buffalo wing sauce until well coated. Stir in cheeses and celery. Pour into ungreased 9-inch glass pie plate.
  • 2 In medium bowl, mix Bisquick mix, cornmeal, milk and egg. Pour over chicken mixture; spread to cover.
  • 3 Bake 25 to 30 minutes or until topping is golden brown. Cut into wedges; drizzle with blue cheese dressing.

To the person questioning measurements. Shredded cheese is a different measurement than water, milk or flour. Check a bag and you will see an 8 ounce package is 2 Cups. The same goes for crumbled cheese

This tastes just like the Buffalo Chicken Dip I make, but with a cornbread top-crust. Not being a big fan of blue cheese I substituted cream cheese for the filling and ranch dressing for the drizzle. The reason I only gave a rating of 3 is because I felt there was too little filling and too much top-crust. Next time I make this I will double the filling recipe and halve the corn bread recipe. I will probably add some shredded cheddar cheese and cayenne pepper to the crust.

I can truly say that this recipe was the very first that I was disappointed in. It was too dry and had little flavor. Needed some zip and liquid. Any suggestions ??
