Bruschetta is one of our favorite finger foods. It’s an easy appetizer that requires just 10 minutes of prep and packs big flavor. Topped with a savory blend of tomatoes, capers, garlic and basil, bruschetta is the appetizer you need at your next party.

Ingredients

slices Italian bread, 1/2 inch thick

cup olive or vegetable oil

medium tomatoes, chopped (1 1/2 cups)

garlic cloves, finely chopped
3
tablespoons chopped fresh basil leaves

tablespoons small capers, drained
1/2
teaspoon salt
1/2
teaspoon pepper

Directions

  • 1 Heat oven to 375ºF.
  • 2 Place bread slices on ungreased cookie sheet. Drizzle 1 teaspoon oil on each slice bread. Bake about 8 minutes or until golden brown.
  • 3 While bread is toasting, mix remaining ingredients. Spoon tomato mixture onto bread slices. Serve at room temperature.

Expert Tips

Capers are the flower buds of the caper bush. Some are not much larger than the end of a cotton swab; others are twice that size. After harvesting they are packed in brine. Look for them in the pickle aisle.

Try one of these other variations of bruschetta (brush tops of 30 baguette slices with olive oil, toast in oven at 375° F for 8-10 minutes or until lightly browned and crisp): 1. Artichoke Bruschetta: Spread toasted baguette slices with Hot Artichoke Dip. Sprinkle with shredded or shaved Asiago or Parmesan cheese. Serve as is, or broil about 1 minute or until cheese is melted. For a different flavor substitute Spinach Dip. 2. Beef Tenderloin Bruschetta: Spread toasted baguette slices with chive-and-onion cream cheese spread thinned with a small amount of milk, or use Creamy Horseradish Sauce. Top with thinly sliced beef tenderloin or roast beef, thinly sliced or chopped plum (Roma) tomato and chopped fresh parsley. 3. Black Bean Cojita Bruschetta: Spread toasted baguette slices with purchased black bean dip or refried black beans; top with salsa. Sprinkle with crumbled Cojita cheese or shredded Cheddar and whole or chopped fresh cilantro leaves. For another taste, substitute guacamole for the dip or refried beans. 4. BLT Bruschetta: Spread toasted baguette slices with mayonnaise or salad dressing. Top with shredded lettuce, well-drained chopped seeded tomato and crumbled cooked bacon or bacon bits. 5. Brie, Raspberry and Pear Bruschetta: Lightly spread toasted baguette slices with seedless raspberry preserves. Top with thinly sliced pear and thin slices of Brie cheese. Serve as is, or broil about 1 minute or just until cheese is melted. 6. Caramelized Onion-Gorgonzola Bruschetta: Top toasted baguette slices with caramelized onions. Sprinkle with crumbled Gorgonzola or blue cheese. Serve as is, or broil about 1 minute or just until cheese is melted. 7. Pesto-Mascarpone Bruschetta: Spread toasted baguette slices with mascarpone cheese or softened cream cheese. Spoon basil, spinach or sun-dried tomato pesto over cheese. Sprinkle with chopped red bell pepper and toasted pine nuts. 8. Smoked Salmon Bruschetta: Arrange thinly sliced smoked salmon on toasted baguet

No fresh tomatoes? Use 1 1/2 cups Progresso™ fire-roasted diced tomatoes, drained, instead.

Pronounced “broo-SHEH-TAH” and meaning "to roast over coals," bruschetta is a traditional Italian garlic bread that's drizzled with olive oil.

Coarsely chop capers to release their flavor-rich juices. Just give them a whack with the side of a chef’s knife before adding them to the tomato mixture.
