Wow, this recipe was FABULOUS!!! Served it with oven roasted pork loin, potato casserole, and rolls. Our guests raved at what a delicious way to serve carrots. We all agreed, the fresh orange peel make it that much more delicious! Yum-yum!

I did not have all the ingredients on hand so really, I just made this as basic brown sugar carrots. I tried to halve the recipe as I only had about 1 lb of carrots left, but even with half the brown sugar it just didn't seem like enough butter. I ended up using the full 1/4 cup of butter and I thought it was too much - but according to my boyfriend, the carrots were perfect. Great! I will try to have some oranges around next time.

This is my favorite way to make carrots. I've also used this recipe with baby carrots.

These are really easy to make. I did use baby carrots and boiling them before you glaze is really the best way to make sure they are soft... without being mushy. I will say using the orange zest makes them have a wonderful taste and should not be skipped when preparing them. It really does help balance out the over all flavor of them.

I made these tonight for dinner and they were pretty good. Incredibly easy and didn''t take quite as long to make as the recipe stated, although I reduced the portion size, so that may have been why they didn''t need to cook as long. They are pretty sweet though, so keep that in mind. I''ll make them again in the future.
