Broccoli, Rice and Cheese Casserole

Great side dish with any main meat dish. Super delish and fairly easy to make.

Ingredients

1: c chopped onion

1: c chopped celery

1/4: lb. butter

2: c cooked rice

2: 10 oz pkgs frozen broccoli

1: 8 oz jar cheez whiz

1: can cream of chicken soup

1/2: c milk

: salt and pepper to taste

Directions

1 Make rice according to package directions. Saute onions and celery in butter.
2 Place rice, onion/celery mixture and broccoli in 2 quart casserole dish.
3 Combine half of the cheese, soup, milk, salt and pepper. Pour over broccoli and rice. Put remaining cheese spread over top.
4 Bake 350 degrees for 30 minutes.

I found this a tasty and simple recipe. (Unlike the previous posting, I had no difficulty with the abbreviations in the directions.) One stick of butter (1/4 lb,) was the perfect amount to saute the two cups of chopped celery and onions. The only change I opted was to drain the butter before adding the onions and celery to the mixture. Thank you BettyCrocker.com for these excellent resources and new ideas!
