Ingredients

package (14 oz) uncooked chicken breast strips for stir-fry
1
can (18 oz) Progresso™ Recipe Starters™ creamy portabella mushroom cooking sauce
1
bag (16 oz) frozen broccoli, cauliflower and carrots, thawed
1 1/2
cups uncooked instant white rice
1
cup shredded Cheddar cheese (4 oz)

  • 1 In 12-inch nonstick skillet, heat 1 tablespoon vegetable oil over medium-high heat. Cook chicken in oil 3 to 4 minutes, stirring occasionally, until chicken is lightly browned and no longer pink in center.
  • 2 Add cooking sauce, 1/2 teaspoon salt and 1/8 teaspoon pepper; heat to boiling. Stir in vegetables and rice; sprinkle with cheese. Remove from heat. Cover; let stand 5 to 7 minutes or until liquid is absorbed.

I used leftover broccoli and rice cheese side dish. Cooked frozen vegetables separate. Already made chicken strips. Then everything mix together.

Easy to make, but kind of bland... need to spice up the chicken a little more with perhaps garlic & Lowry's Season Salt.

I made this over the weekend and thought that it was just "ok" and thought it was a bit to runny. I only use broccoli and ended up using two cups of brown rice and it still didn't seem very thick and I thought it lacked flavor. It was easy to make and my fiance really like it but it was a bit plain for me. Will have to try and tweek it a little bit next time around.
