tablespoon red wine vinegar

tablespoon finely chopped shallots

teaspoon Dijon mustard

cups packed arugula or mixed greens (about 5 oz)

medium tomatoes, sliced

oz brie cheese, cut into bite-size strips
  1. In small bowl, mix dressing ingredients with wire whisk.
  2. In large bowl, toss arugula with half of the dressing. Arrange sliced tomatoes on medium platter. Place arugula and brie around tomatoes; drizzle with remaining dressing. Serve immediately.
