Yummy fresh peach pie which is awesome with Peach or Vanilla ice cream. Family recipe original author unknown. Very easy!

Ingredients

lbs fresh peach slices
3/4
cup light brown sugar

lemon juice lemon or lime

tablepoons quick cooking tapioca

teaspoon vanillaextract

teaspoon cinnamon
1/4
teaspoon nutmeg
1/4
teaspoon salt
4
tablespoons butter
Piecrust
3 1/2
cups flour
1/4
cup sugar
1
teaspoon salt
1
diced stick cold butter
2
diced stick cold butter
1
tablespoon white or cider vinegar
1/3
cup ice water

  • 1 Combine first 9 ingredients till mixed and pour into pie shell, dot with 4 tablespoons of butter
  • 2 ALL BUTTER PIECRUST Combine flour,sugar and salt in a food processor until combined with 1 diced stick butter. add 2 more diced sticks cold butter pulse three or so times till mixture resembles coarse meal. add 1 T vinegar. gradually pour in ice water pulsing 4 times until combined. torn on to clean surface and press into a cohesive dough without over working (you should see bits of butter) Wrap in plastiic wrap and press in to a 1 inch disk refrigerate 1 hr before rolling out.
  • 3 How to make Pie: Divide the chilled dough in half, roll 1 piece into a 123 inch 1/8 inch thick circle ona a lightly floured surface. Refrigerate the seconfd half. Rolll the dough onto a rolling pin then unrolllp into a 9 inch pie panglassa letting it hang over edge. Add the above filling. Roll out the other piece of dough and place over filling. Press crust edges together and trim leaving a 1 inch overhang. Roll up or pinch the overhang to seal. Place a foil-lined baking sheet on a rack in the lower third of the oen preheat to 450 degrees. Wrap an oiled, wide band around edge of pie to protect from burning edge.
