Large Minced Carrots

oz Sliced White Mushrooms

Tbsp Sage
1/2
Tsp Thyme
1/2
Tsp Salt
1/4
Tsp Ground Nutmeg
1/4
Tsp Black Pepper
3/4
Cup Dry White Wine
2
Cups Chicken Broth
1/2
Lb Cubed, Toasted French Bread
1/2
Lb Cubed, Toasted Pumpernickel Bread

  • 1 Cook bacon until crisp. Drain (reserve 2 Tbsp of the grease). Add onion, celery, & carrots, cook: stir occasionally, 5 minutes. Add mushrooms cook additional 5 minutes, stir occasionally.
  • 2 Add sage, thyme, salt, nutmeg, & pepper. Stir in wine, cook until reduced by half (about 1-2 minutes) Add broth, bring to simmer 1 minute.
  • 3 Sitr in bread cubes, mix well. Spoon into greased casserole dish. Cover let stand 10 minutes before serving.
