cup canned pumpkin

cup vegetable oil

teaspoon vanilla

cups Gold Medal® all-purpose flour or Better for Bread™ flour

teaspoons baking powder

teaspoon salt

teaspoon ground cinnamon
1/4
teaspoon ground nutmeg
1/8
teaspoon ground cloves
1/2
cup chopped nuts, if desired

Directions

  • 1 Grease bread machine pan and kneading blade generously with shortening.
  • 2 Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer.
  • 3 Select Quick Bread cycle only. After 3 minutes into cycle, open lid and carefully scrape down sides of pan. Close lid to continue with cycle.
  • 4 Cool baked bread 10 minutes. Remove from pan to wire rack, or follow manufacturer's recommendation.

This recipe took an hour and 10 minutes longer to cook than the original cooking time stated. I have a bread machine with a just Bake setting, so when the bread wasn't done after the first suggested cooking time I left it in for another 70 MINUTES!It still did not cook all the way through, and was way too dense and squidgy in the middle. Yuck. Never again. The lowest rating I can give is a half star but I would rather give a negative star. A real disappointment Betty Crocker.

I have to say that I'm disappointed in the bread. Aside from a few alterations in the spices themselves the only thing I did differently was add a tsp of baking soda as many of you suggestion, I followed the rest of the ingredients exactly. I also was confused on the baking time so I just put it at my "fast bake" setting which runs for 1 hour. I don't know that I should say it didn't rise because the center was very high but all around the loaf itself was probably only 2" high, even with the baking powder with the extra baking soda. As well as it being small, the crust was burnt! I also agree with someone else who said it's a little bland, I wish I had added more spices. I may try this recipe again on the regular setting, however, as it is, it was quite disappointing to me.

Well, I was confused also about the "quick bread cycle only/3hr 10min total time" discrepancy, but tought it made more sense the quick setting, so used the express bake 80 min on my oster, also used the baking soda, 1 tsp pumpkin spice and only brown sugar, help the mixing a lil bit at the 3rd min, left it alone, and presto, everybody loved it, very nice thanksgiving, the aroma was great. baked it again today, run out of vanilla, used almond extract instead, used 1/2 cup of whole wheat flour instead of 1/2 cup all purp flour, coconut oil instead, and add a tbsp of pure cocoa powder. It was very good, this time 5 sp rating kuz is healthier. buon appetito
