cup plus 2 tablespoons Gold Medal® whole wheat flour

cups Gold Medal® Better for Bread™ flour

teaspoons instant coffee (dry)

tablespoon caraway seed

teaspoon bread machine or quick active dry yeast

  • 1 Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer.
  • 2 Select Whole Wheat or Basic/White cycle. Use Medium or Light crust color. Remove bread from pan, and cool on wire rack.

Pumpernickel bread is a heavier dark bread. Our recipe uses both rye and whole wheat flours. The molasses, cocoa and coffee not only add flavor, but they also increase the deep brown color.

This was my first "from scratch" loaf in my bread machine, I've relied on mixes in the past. It was the BEST loaf ever! It didn't even last the weekend here, I made it to go with a slow cooker beans and sausage meal and it really helped cut the heat from too much chili powder! Next time though, I will use the dough cycle and finish it in the loaf pan for a "prettier" loaf. I didn't have any bread machine yeast, so I added an entire pouch of Rapid Rise Yeast, turned out perfectly.
