boneless, skinless chicken breast halves (1 lb)

medium onion, chopped

cloves garlic, finely chopped

cup sliced zucchini or yellow summer squash

cup chopped green bell pepper

can (28 oz) diced tomatoes

jar (4 1/2 oz) sliced mushrooms, drained
Grated Parmesan cheese, if desired

Directions

  • 1 Cook and drain pasta as directed on pkg.
  • 2 Cut each chicken breast crosswise into three pieces. Heat oil in 10" skillet over medium-high heat. Brown chicken, onion and garlic in oil about 5 minutes, stirring occasionally.
  • 3 Stir zucchini, bell pepper and tomatoes into chicken. Heat to boiling; reduce heat. Cover and simmer 5 minutes. Uncover and simmer 5 minutes longer. Serve over pasta; sprinkle with cheese.
