I actually didn't like the idea of gingersnaps & chocolate? sorry? and I didn't have bourbon? So, chocolate wafer crumbs and raspberry liqueur! YUMMMY! TY for the basis!

I haven't made these yet but considering I am planning on baking them for my niece and nephews, I too will be making them non-alcoholic. I'm planning on substituting some vanilla and rum extracts and just using water in place of the alcohol in the recipe. Another idea I had is to use non-alcoholic egg nog. Chocolate milk might also work if you wanted to swap out the gingersnaps for oreos or another chocolate cookie type.
