8 ounce pkg chocolate wafer cookies, crushed

8 ounce pkg cream cheese, softened

cup sugar

ounces dark chocolate, melted

cup whipping cream

cup bourbon
  1. Heat oven to 325F. In medium bowl, mix crushed cookies and butter. Press into bottom and sides of 10-inch springfrom pan. Refrigerate.
  2. In large bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, beating well after each addition. Add melted chocolate; beat well. Stir in cream and bourbon until smooth. Pour into pan.
  3. Bake 55 to 65 minutes or until edges are set. (Center will be soft.) Cool completely. Refrigerate about 2 hours or until set. Garnish with whipped cream, if desired.
