I bought the whipping cream - not my favorite thing to do since I don't use it for much else, but it said 3/4 cup, so I got it. But it was like chocolate milk, so I had to add so much powdered sugar to make it like icing so I could use it - certainly a mistake in the recipe. They were tasty, but lots of work; it made about 50, so I froze several and they are great out of the freezer. If I make them again, I will make them early and freeze them for later use.

Did anyone else find 3/4 c. whipping cream way too much? Mine just ran right off the cake. Everyone loved them, but I added more chocolate chips and it made it more like icing, but at least stayed on. I thought maybe recipe should have been 1/4 c. whipping cream

I lightly greased & floured the pan,,,but these needed help getting them out of the pan and 48 little muffins needing help was a pain. Besides having to slice each one....... Tasted good,,,but too much work for me.

It doesn't seem like a lot of pudding because these make mini muffins in mini tins, not regular size ones,although you can alter the recipe to make them in regular size muffin tins too.

1 cup of pudding equals 48 teaspoons, so I used about 1 teaspoon filling for each cake. I used the instant French vanilla pudding and mixed it according to the pie filling directions, so it was a little thicker. Also, since I only used 3/4 cup cream from a 1 cup carton for the ganache, I used the rest in the filling to make it a little richer.

You can also use one of the prepared puddings in the dairy section of your grocery store. Lots of companies make them in lots of flavors. They usually come in 'lunch-box' 1/2 cup sized servings.

I forgot to mention, it made it easier to fill the cupcakes by puttting the pudding in a ziplock bag (or icing bag if you have one)cut the tip off a corner and pipe onto the cake.
