Like a tropical cocktail in a fun-to-eat cookie, this dessert comes together in a flash with Betty Crocker sugar cookie mix.

Ingredients

Cookies

Glaze

  • 1/2 cup powdered sugar
  • 1 teaspoon fresh lime juice
  • 2 teaspoons rum

Steps

    Heat oven to 375°F. Line cookie sheets with cooking parchment paper.

    In medium bowl, stir together Cookie ingredients until soft dough forms.
  • 3
    Drop dough by rounded teaspoonfuls 2 inches apart onto cookie sheets.

    Bake 7 to 9 minutes or until edges are light brown. Remove from cookie sheets to cooling racks.

    While cookies are cooling, in small bowl, beat Glaze ingredients with whisk until smooth.

    Brush light coating of glaze over each cookie. Let stand until glaze is dry and hard.

    Try adding additional grated lime peel to the glaze for even more lime flavor.

    Use coconut butter instead of coconut oil for a cookie similar in consistency to peanut butter cookies.
