Blueberry-Oatmeal Muffins

Ingredients

cup Yoplait® 99% Fat Free plain or creamy vanilla yogurt (from 2-lb container)

cup old-fashioned or quick-cooking oats
1
egg or 2 egg whites, slightly beaten
1/4
cup canola oil
1/2
cup packed brown sugar
2/3
cup Gold Medal® all-purpose flour
2/3
cup whole wheat flour
1
tsp baking soda
1
tsp ground cinnamon
1/4
tsp salt
1
cup fresh or frozen (do not thaw) blueberries

Directions

  • 1 Heat oven to 400°F. Place paper baking cups in 12 regular-size muffin cups, or grease bottoms only of muffin cups.
  • 2 In small bowl, mix yogurt and oats. In large bowl, mix egg, oil and brown sugar. Stir in flours, baking soda, cinnamon, salt and yogurt mixture (batter will be lumpy). Gently stir in blueberries. Divide batter evenly among muffin cups.
  • 3 Bake 18-20 min or until golden brown. Immediately remove from pan.

I'm baking these now, this makes round 3. I love these. I made a double batch for a large ski trip and they loved em. My spice ups have been to almost double the yogurt, I also buy flavored, and I add craisins and blueberries totalling 1 1/2 c. I also skipped the paper cups on round 2 and I liked that better, but I bet they will dry out faster if you don't eat them. But mine haven't made it to the end of day 2

I made these muffins all the time. I personally add some flax seed and different fruits and veggies in them. They are very hearty and a hit every time. This recipe is easy to alter depending on the fruits you have in the fridge.

These muffins are delicious! They are easy to make, moist, slightly sweet and have the perfect texture due to the mix of flours and oatmeal in the batter. As you can imagine from the picture, they are not "bakery style", but these are perfect wholesome muffins, especially for breakfast.
