Ingredients

Pancake Bites

cup Original Bisquick™ mix
1/2
cup milk
1/4
cup real maple syrup
1
egg
1/2
cup fresh blueberries
1
tablespoon grated lemon peel

Toppings, if desired

Additional real maple syrup
Powdered sugar

Directions

  • 1 Heat oven to 350°F. Lightly spray 16 to 18 mini muffin cups with cooking spray.
  • 2 In large bowl, stir together Bisquick® mix, milk, maple syrup and egg. Add blueberries and lemon peel; stir just until combined. A few lumps may remain.
  • 3 Pour batter evenly into mini muffin cups, filling nearly to the top of each cup.
  • 4 Bake 10 to 15 minutes or until tops are light golden brown and spring back when lightly touched. Cool in pan 5 minutes. Remove from muffin cups to serving plates.
  • 5 Serve pancake bites warm or at room temperature drizzled with maple syrup or sprinkled with powdered sugar.

Expert Tips

Run a butter knife along the edge of each pancake bite to remove them easily from the muffin cups.

Serve pancake bites on a stick for a fun presentation.
