This delicious Cobbler has a crisp biscuit topping, warm blueberry filling and a light lemon glaze. Can be made with fresh or frozen blueberries.

cups fresh or frozen blueberries, thawed

teaspoon lemon zest or lemon extract

tablespoons butter , slightly softened

cup buttermilk

cup Confectioners sugar

teaspoon lemon extract

tablespoons water
  1. Pre-heat oven to 375. Grease and flour a 2-qt. baking dish, substituting cornstarch for flour.
  2. In a large bowl, combine the blueberries, ½ cup sugar, cornstarch, lemon juice, cinnamon and nutmeg. Transfer to baking dish.
  3. In a small bowl, combine the flour, lemon zest, baking powder, salt, baking soda and remaining sugar; cut in the butter until mixture resembles coarse crumbs. Stir in buttermilk and lemon extract, if being used in place of zest, just until moistened. Drop by tablespoons onto blueberry mixture.
  4. Bake, uncovered for 30 - 35 minutes until golden brown.
  5. For glaze: combine confectioners sugar, lemon extract and water, drizzle over warm cobbler.
